- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup sweetened shredded coconut
- 1 cup chocolate chips
- 1 cup chopped almonds
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the eggs one at a time, incorporating each fully before adding the next. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the creamed ingredients until just blended.
- Gently fold in the shredded coconut, chocolate chips, and chopped almonds.
- Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow the cookie bars to cool in the pan before cutting into squares.
Notes
For extra flavor, toast the almonds before adding. Serve warm with vanilla ice cream for a special treat.
