Delightful cookie bars combining chocolate, coconut, and almonds, perfect for sharing at gatherings or enjoying as a sweet treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sweetened shredded coconut
  • 1 cup chocolate chips
  • 1 cup chopped almonds

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, incorporating each fully before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the creamed ingredients until just blended.
  5. Gently fold in the shredded coconut, chocolate chips, and chopped almonds.
  6. Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
  7. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the cookie bars to cool in the pan before cutting into squares.

Notes

For extra flavor, toast the almonds before adding. Serve warm with vanilla ice cream for a special treat.
