Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cottage cheese and eggs. Whisk until smooth.
- Dice the apples into small pieces and fold them into the mixture.
- Stir in the rolled oats (or almond flour), maple syrup (or honey), ground cinnamon, vanilla extract, and baking powder. Mix until everything is well combined.
- Pour the mixture into a greased 9×9 inch baking dish, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
