Description

A comforting one-pot meal featuring savory ground beef, tender elbow macaroni, and a rich tomato broth.


Ingredients

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup elbow macaroni, uncooked
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, brown the ground beef over medium heat, breaking it up as it cooks. Drain excess grease once the beef is cooked through.
  2. Push the beef to one side of the pot. If using olive oil, add it to the empty side and sauté the onion and garlic until soft and fragrant, about 3-4 minutes.
  3. Stir in the tomato sauce, diced tomatoes, beef broth, and water. Add the dried basil, oregano, paprika, salt, and pepper. Bring to a boil.
  4. Once boiling, reduce heat and let it simmer for 10-15 minutes.
  5. Add the elbow macaroni and continue to simmer for 8-10 minutes, or until the pasta is tender, stirring occasionally.
  6. Adjust seasonings if needed. Garnish with freshly chopped parsley and serve hot.

Notes

For added flavor, you can combine beef broth with chicken broth, and feel free to adjust seasonings to your taste.
