Description

A cozy and comforting beef stew made effortlessly in a crock pot, perfect for weeknight dinners.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides and transfer them to the crock pot.
  2. In the same skillet, sauté the onion and garlic until translucent, then add to the crock pot.
  3. Add carrots, potatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper to the crock pot.
  4. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.

Notes

Serve warm, garnished with fresh parsley. Pairs well with crusty bread or over rice. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
