A comforting beef stew filled with tender meat and vegetables, perfect for chilly evenings.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 tablespoons vegetable oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, peeled and diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the beef cubes and brown them on all sides; remove and set aside.
- In the same pot, add the chopped onion and minced garlic and sauté until the onion becomes translucent.
- Return the beef to the pot and pour in the beef broth. Add the carrots, potatoes, thyme, and bay leaves.
- Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours until beef is tender.
- If a thicker stew is desired, mix the flour with a little cold water, stir in during the last 15 minutes of cooking.
- Season with salt and pepper to taste. Serve hot.
Notes
Serve with warm crusty bread or over mashed potatoes or rice for a filling meal. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
