- 1 cup (226g) unsalted butter, softened
- 1 cup (250g) creamy peanut butter
- 1 cup (200g) granulated sugar
- 1 cup (220g) packed light brown sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 2 ½ cups (300g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- Additional granulated sugar for rolling (optional)
Instructions
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and peanut butter until light and fluffy.
- Add the granulated sugar and brown sugar; beat until aerated.
- Beat in eggs one at a time, then add vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Chill the dough in a covered bowl for at least 30 minutes.
- Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
- Form dough into balls and roll in granulated sugar if desired.
- Press down with a fork to create a crisscross pattern.
- Bake for 10-12 minutes until edges are golden, but centers are soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container for 3-5 days or freeze for up to 3 months. For soft cookies, add a half-slice of bread in the container.
