- 1/2 cup unsalted butter
- 2 cups heavy cream
- 3 garlic cloves, minced
- 2 cups freshly grated Parmesan cheese
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon freshly ground black pepper (or to taste)
- 1 pinch ground nutmeg (optional)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- In a medium saucepan over medium heat, melt the butter completely without browning it.
- Add minced garlic and sauté for about 30 seconds until fragrant, stirring constantly.
- Slowly pour in the heavy cream while whisking continuously to combine with the butter and garlic.
- Bring the mixture to a gentle simmer, then reduce heat to low and let it simmer for 4–5 minutes to thicken slightly.
- Remove the pan from the heat and slowly stir in the Parmesan cheese, whisking until fully melted and smooth.
- Season with salt, pepper, and a pinch of nutmeg if desired.
- Adjust the sauce thickness with a bit of warm milk or pasta water if needed.
- Serve immediately over hot pasta and garnish with chopped parsley if desired.
Notes
For best results, use freshly grated Parmesan cheese and avoid overheating the sauce to keep it smooth.
