- 2 tbsp vegetable oil (or coconut oil for added flavor)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool on a wire rack.
- While the cookies are cooling, whip the heavy cream until soft peaks form and gradually add powdered sugar.
- Cut a small slit in the center of each cookie and fill it with whipped cream.
- Melt chocolate chips and vegetable oil together in a microwave-safe bowl in 30-second intervals until smooth. Drizzle or dip the filled cookies in the chocolate glaze.
