Description

Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar (or brown sugar)
  • 2 large eggs
  • 1 tsp vanilla extract (or almond extract for a twist)
  • 2 cups all-purpose flour (or gluten-free flour blend for a gluten-free option)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup heavy cream (or half-and-half)
  • 1/4 cup powdered sugar (or regular sugar)
  • 1 cup semi-sweet chocolate chips (or dark chocolate for a richer flavor)
  • 2 tbsp vegetable oil (or coconut oil for added flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool on a wire rack.
  8. While the cookies are cooling, whip the heavy cream until soft peaks form and gradually add powdered sugar.
  9. Cut a small slit in the center of each cookie and fill it with whipped cream.
  10. Melt chocolate chips and vegetable oil together in a microwave-safe bowl in 30-second intervals until smooth. Drizzle or dip the filled cookies in the chocolate glaze.
