A comforting dish featuring tender broccoli in a creamy, cheesy sauce topped with crunchy Ritz cracker crumbs.
Ingredients

- 4 cups chopped broccoli
- 1 (10 ounce) can of cream of chicken soup
- 1 cup mayonnaise (or Greek yogurt/sour cream)
- 1/4 cup butter, melted
- 2 large eggs, slightly beaten
- 1/2 medium yellow onion, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups extra sharp cheddar cheese, shredded
- 1/2 sleeve of Ritz crackers, crushed
Instructions
- Wash, trim, and cut broccoli into bite-sized pieces. Steam or blanch for 3-5 minutes until tender-crisp. Drain well.
- In a large bowl, whisk together cream of chicken soup, mayonnaise, eggs, onion, salt, and pepper.
- Add drained broccoli and cheddar cheese to the soup mixture. Stir gently until combined.
- In a small bowl, mix crushed Ritz crackers with melted butter until coated.
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish. Pour broccoli mixture into the dish and spread evenly. Sprinkle cracker topping on top.
- Bake for 25-35 minutes until bubbly and golden brown. Allow to rest for 10-15 minutes before serving.
