Description

A comforting dish featuring tender broccoli in a creamy, cheesy sauce topped with crunchy Ritz cracker crumbs.


Ingredients

  • 4 cups chopped broccoli
  • 1 (10 ounce) can of cream of chicken soup
  • 1 cup mayonnaise (or Greek yogurt/sour cream)
  • 1/4 cup butter, melted
  • 2 large eggs, slightly beaten
  • 1/2 medium yellow onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups extra sharp cheddar cheese, shredded
  • 1/2 sleeve of Ritz crackers, crushed

Instructions

  1. Wash, trim, and cut broccoli into bite-sized pieces. Steam or blanch for 3-5 minutes until tender-crisp. Drain well.
  2. In a large bowl, whisk together cream of chicken soup, mayonnaise, eggs, onion, salt, and pepper.
  3. Add drained broccoli and cheddar cheese to the soup mixture. Stir gently until combined.
  4. In a small bowl, mix crushed Ritz crackers with melted butter until coated.
  5. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish. Pour broccoli mixture into the dish and spread evenly. Sprinkle cracker topping on top.
  6. Bake for 25-35 minutes until bubbly and golden brown. Allow to rest for 10-15 minutes before serving.
