Description

A delightful blend of moist banana bread and sweet coffee cake, perfect for breakfast or dessert.


Ingredients

  • 34 medium or large bananas
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
  • 1 tsp cinnamon (for crumb topping)
  • 1 cup flour (for crumb topping)
  • 1 cup brown sugar (for crumb topping)
  • 6 Tbsp cold butter (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8×4 inch loaf pans.
  2. Mash the bananas with brown sugar, vanilla extract, and ground cinnamon until smooth.
  3. Cream softened butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Sift in all-purpose flour, baking soda, and salt; stir gently until just combined.
  6. Mix in the sour cream until well incorporated.
  7. Fold in the mashed banana mixture until combined.
  8. For the crumb topping, mix 1 cup flour, 1 cup brown sugar, and cold butter until it resembles coarse crumbs.
  9. Layer the batter in prepared pans, topping with the crumb mixture.
  10. Bake for 50-60 minutes, or until a toothpick comes out clean. Let cool before removing from pans.

Notes

Serve warm with a pat of butter or a dollop of whipped cream. Great with coffee or tea.
