Description

A healthier twist on traditional Alfredo, this creamy pasta bake combines cottage cheese and Parmesan for a satisfying family meal.


Ingredients

  • 1 cup cottage cheese (4% fat)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 8 ounces linguine
  • 1/4 cup chopped fresh parsley (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the linguine according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan over medium heat, melt the butter. Add minced garlic, and sauté for 1-2 minutes until fragrant.
  4. Stir in the cottage cheese, 1/2 cup of freshly grated Parmesan, salt, and black pepper. Stir until well combined and creamy.
  5. Add the drained linguine to the saucepan, tossing to coat the pasta evenly with the sauce.
  6. Transfer the mixture to a greased baking dish. If desired, sprinkle the top with additional grated Parmesan cheese and chopped parsley.
  7. Bake for 20-25 minutes, or until bubbly and slightly golden on top.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 3 months.
