A healthier twist on traditional Alfredo, this creamy pasta bake combines cottage cheese and Parmesan for a satisfying family meal.
Ingredients

- 1 cup cottage cheese (4% fat)
- 1/2 cup freshly grated Parmesan cheese
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
- 8 ounces linguine
- 1/4 cup chopped fresh parsley (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the linguine according to package instructions until al dente. Drain and set aside.
- In a large saucepan over medium heat, melt the butter. Add minced garlic, and sauté for 1-2 minutes until fragrant.
- Stir in the cottage cheese, 1/2 cup of freshly grated Parmesan, salt, and black pepper. Stir until well combined and creamy.
- Add the drained linguine to the saucepan, tossing to coat the pasta evenly with the sauce.
- Transfer the mixture to a greased baking dish. If desired, sprinkle the top with additional grated Parmesan cheese and chopped parsley.
- Bake for 20-25 minutes, or until bubbly and slightly golden on top.
- Remove from the oven and let cool for a few minutes before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 3 months.
