- 1/2 lb ground beef
- 1 tablespoon olive oil
- 16 oz Velveeta cheese, cubed
- 1 cup shredded sharp cheddar cheese
- 1/2 cup whole milk
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1/4 cup diced pickled jalapeños
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Fresh chopped cilantro for garnish
- Diced tomatoes for topping (optional)
- Sliced jalapeños for topping (optional)
- Tortilla chips for serving
Instructions
- Heat a skillet over medium-high heat. Add olive oil if needed, then brown the ground beef. Season with salt, pepper, and a pinch of chili powder. Cook until no longer pink. Drain excess grease and set aside.
- Lower the heat to medium. Add Velveeta cubes, shredded cheddar, and milk to the skillet. Stir until fully melted and smooth.
- Stir in the drained diced tomatoes with green chilies and pickled jalapeños. Add chili powder, smoked paprika, garlic powder, and onion powder, adjusting salt and pepper to taste.
- Return the cooked beef to the cheese mixture. Stir to combine and let it simmer for a couple of minutes to blend flavors.
- Garnish with cilantro, fresh diced tomatoes, and sliced jalapeños. Serve warm with tortilla chips or your favorite dippers.
Notes
For a spicier kick, add more jalapeños or keep some of the juice from the diced tomatoes.
