Description

A creamy, cheesy dip with a spicy kick, perfect for gatherings and game days.


Ingredients

  • 1/2 lb ground beef
  • 1 tablespoon olive oil
  • 16 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup whole milk
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1/4 cup diced pickled jalapeños
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh chopped cilantro for garnish
  • Diced tomatoes for topping (optional)
  • Sliced jalapeños for topping (optional)
  • Tortilla chips for serving

Instructions

  1. Heat a skillet over medium-high heat. Add olive oil if needed, then brown the ground beef. Season with salt, pepper, and a pinch of chili powder. Cook until no longer pink. Drain excess grease and set aside.
  2. Lower the heat to medium. Add Velveeta cubes, shredded cheddar, and milk to the skillet. Stir until fully melted and smooth.
  3. Stir in the drained diced tomatoes with green chilies and pickled jalapeños. Add chili powder, smoked paprika, garlic powder, and onion powder, adjusting salt and pepper to taste.
  4. Return the cooked beef to the cheese mixture. Stir to combine and let it simmer for a couple of minutes to blend flavors.
  5. Garnish with cilantro, fresh diced tomatoes, and sliced jalapeños. Serve warm with tortilla chips or your favorite dippers.

Notes

For a spicier kick, add more jalapeños or keep some of the juice from the diced tomatoes.
