Deliciously tart and sweet, these Cranberry Crumb Bars are a perfect treat for any occasion with a buttery crust and crumbly topping.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen cranberries
- 1/2 cup brown sugar
- 1 teaspoon cornstarch
- 1/2 teaspoon cinnamon
- 1 cup rolled oats
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Mix in the flour and salt until combined. Reserve half of this mixture for the topping.
- Press the remaining half into the bottom of the prepared baking pan to form the crust.
- In another bowl, combine the cranberries, brown sugar, cornstarch, and cinnamon, then spread it evenly over the crust.
- To the reserved crumb mixture, add the rolled oats and chopped nuts (if using); crumble this mixture evenly over the cranberry layer.
- Bake for 30-35 minutes, or until the topping is golden brown and starts to bubble slightly around the edges.
- Allow to cool completely before slicing into bars.
Notes
For elevated flavor, consider stirring in orange zest with the cranberries. Store in an airtight container for up to 3 days or freeze for up to 3 months.
