Description

Deliciously tart and sweet, these Cranberry Crumb Bars are a perfect treat for any occasion with a buttery crust and crumbly topping.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen cranberries
  • 1/2 cup brown sugar
  • 1 teaspoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1 cup rolled oats
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Mix in the flour and salt until combined. Reserve half of this mixture for the topping.
  4. Press the remaining half into the bottom of the prepared baking pan to form the crust.
  5. In another bowl, combine the cranberries, brown sugar, cornstarch, and cinnamon, then spread it evenly over the crust.
  6. To the reserved crumb mixture, add the rolled oats and chopped nuts (if using); crumble this mixture evenly over the cranberry layer.
  7. Bake for 30-35 minutes, or until the topping is golden brown and starts to bubble slightly around the edges.
  8. Allow to cool completely before slicing into bars.

Notes

For elevated flavor, consider stirring in orange zest with the cranberries. Store in an airtight container for up to 3 days or freeze for up to 3 months.
