Description

A cozy and hassle-free dish featuring tender chicken and sweet butternut squash, enhanced by a flavorful maple Dijon sauce.

Ingredients

Scale
  • 3 boneless skinless chicken breasts
  • 3 cups cubed butternut squash
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 4 sprigs fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Season the chicken breasts with salt and pepper. Optionally sear in olive oil until golden brown.
  2. Peeled and cube butternut squash, placing it in the bottom of the crockpot.
  3. Whisk together maple syrup, Dijon mustard, minced garlic, and chicken broth in a bowl.
  4. Place the seasoned chicken on top of the squash and pour the maple Dijon sauce over everything.
  5. Add thyme sprigs on top.
  6. Cover the crockpot and cook on LOW for 5–6 hours or HIGH for 3–4 hours until cooked through.
  7. Remove thyme sprigs and serve the chicken and squash with sauce.

Notes

Searing the chicken enhances flavor. For a thicker sauce, reduce it in a pan after cooking.
