- 3 boneless skinless chicken breasts
- 3 cups cubed butternut squash
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 4 sprigs fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season the chicken breasts with salt and pepper. Optionally sear in olive oil until golden brown.
- Peeled and cube butternut squash, placing it in the bottom of the crockpot.
- Whisk together maple syrup, Dijon mustard, minced garlic, and chicken broth in a bowl.
- Place the seasoned chicken on top of the squash and pour the maple Dijon sauce over everything.
- Add thyme sprigs on top.
- Cover the crockpot and cook on LOW for 5–6 hours or HIGH for 3–4 hours until cooked through.
- Remove thyme sprigs and serve the chicken and squash with sauce.
Notes
Searing the chicken enhances flavor. For a thicker sauce, reduce it in a pan after cooking.
