Description

Vibrant green pancakes that add festive cheer to your holiday breakfast or brunch, topped with a sweet cream cheese glaze.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 ½ cups milk (or dairy-free alternative)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon green food coloring
  • 2 tablespoons unflavored oil (avocado, vegetable, or canola)
  • 4 oz. cream cheese (softened)
  • ½ cup powdered sugar
  • ¼ cup whole milk (for glaze)
  • 1 teaspoon pure vanilla extract (for glaze)
  • Pinch salt (for glaze)
  • Cream cheese glaze (for drizzling)
  • Red heart sprinkles (for decoration)
  • Whipped cream (for topping)
  • Fresh fruit (strawberries, blueberries, or bananas)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix the milk, vanilla extract, green food coloring, and oil until well combined.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; avoid overmixing.
  4. Heat a nonstick skillet over medium heat. Pour a ladleful of batter onto the skillet and cook until bubbles form on the surface, about 2-3 minutes. Flip and cook until the other side is golden brown.
  5. While pancakes are cooking, beat the softened cream cheese in a bowl. Gradually add the powdered sugar, milk, and vanilla extract until you achieve a smooth glaze. Add a pinch of salt to balance the flavors.
  6. Stack the pancakes on plates and drizzle with cream cheese glaze. Top with whipped cream, fresh fruit, and festive red heart sprinkles.

Notes

Store leftover pancakes in an airtight container in the fridge for up to 3 days or freeze them for up to 2 months.
