- 1/4 cup cinnamon sugar (to dust buttered pans)
- 1/3 cup butter (softened)
- 1 1/4 cup brown sugar
- 2 large eggs
- 4 mashed bananas (very ripe)
- 1 cup sour cream (full fat)
- 2 tsp vanilla extract
- 2 teaspoons cinnamon powder
- 1/2 teaspoon sea salt
- 1 1/2 tsp baking soda
- 2 1/4 cups flour
- Optional: 1 cup chopped pecans
- Optional: 1/2 cup mini semisweet chocolate chips
Instructions
- Adjust the oven rack to the middle and preheat to 325°F.
- Butter two 7-inch loaf pans and dust with cinnamon sugar.
- In a mixing bowl, blend the softened butter and brown sugar until creamy.
- Add the mashed bananas and mix well.
- Stir in the sour cream, eggs, and vanilla until thoroughly incorporated.
- Add the dry ingredients: flour, cinnamon, baking soda, and salt; mix just until combined.
- If desired, stir in the optional pecans or chocolate chips.
- Pour the batter into the prepared loaf pans, smoothing the tops.
- Bake for about 1 hour and 10 minutes, or until a toothpick inserted comes out clean.
- Let the bread cool completely before cutting.
Notes
For best results, use a bread knife when slicing. Cool completely before storing. Can be wrapped and kept at room temperature for up to 3 days, or frozen for up to 3 months.
