Ingredients

- 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Add the ground beef, breaking it up with a spatula, and cook until browned.
- Stir in the mixed vegetables and cook until they are tender, about 3-5 minutes.
- Pour in the soy sauce, and add salt and pepper to taste.
- Serve hot over your choice of cooked rice or noodles.
