Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 2 cups cooked rice
  • 1 cup broccoli, chopped
  • 1 cup carrots, diced
  • 1 cup mushrooms, sliced
  • 1 can cream of chicken soup (low-fat)
  • 1/2 cup Greek yogurt
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, cooked rice, broccoli, carrots, mushrooms, cream of chicken soup, Greek yogurt, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Transfer the mixture into a greased 9×13 inch baking dish.
  4. If using, sprinkle shredded cheese on top.
  5. Bake for 25-30 minutes, or until heated through and bubbly.
  6. Let cool for a few minutes before serving.

Notes

For a creamy mushroom variation, substitute cream of chicken soup with cream of mushroom. To make it vegetarian, replace chicken with cooked chickpeas and use vegetable broth.
