- 1 lb chicken breast, cooked and shredded
- 2 cups cooked rice
- 1 cup broccoli, chopped
- 1 cup carrots, diced
- 1 cup mushrooms, sliced
- 1 can cream of chicken soup (low-fat)
- 1/2 cup Greek yogurt
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, cooked rice, broccoli, carrots, mushrooms, cream of chicken soup, Greek yogurt, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Transfer the mixture into a greased 9×13 inch baking dish.
- If using, sprinkle shredded cheese on top.
- Bake for 25-30 minutes, or until heated through and bubbly.
- Let cool for a few minutes before serving.
Notes
For a creamy mushroom variation, substitute cream of chicken soup with cream of mushroom. To make it vegetarian, replace chicken with cooked chickpeas and use vegetable broth.
