Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup mixed vegetables (broccoli, bell pepper, carrots)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Fresh herbs for garnish (parsley, cilantro)
Instructions
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium pot, combine quinoa and vegetable broth, and bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes or until quinoa is fluffy and the liquid is absorbed.
- In a skillet, heat olive oil over medium heat until shimmering.
- Add mixed vegetables to the skillet and sauté for 5-7 minutes, seasoning with salt, pepper, garlic powder, and onion powder. The veggies should be tender yet crisp.
- Serve the fluffy quinoa topped with the sautéed vegetables and garnish with fresh herbs.
