Description

A nutritious and delicious low carb dinner featuring chicken, broccoli, and cauliflower rice, perfect for the whole family.


Ingredients

Scale
  • 2 Chicken breasts
  • 2 cups Broccoli, steamed
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Cauliflower rice
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breast with salt, pepper, and lemon juice.
  3. Heat olive oil in a pan over medium heat and add minced garlic.
  4. Sear the chicken in the pan for about 5-7 minutes on each side until golden brown.
  5. In a separate pot, steam the broccoli until tender.
  6. Serve the seared chicken on a bed of cauliflower rice with steamed broccoli on the side.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the cooked chicken and cauliflower rice for up to 2 months.
