- 2 Chicken breasts
- 2 cups Broccoli, steamed
- 2 tablespoons Olive oil
- 2 cloves Garlic, minced
- 1 cup Cauliflower rice
- Salt, to taste
- Pepper, to taste
- 2 tablespoons Lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breast with salt, pepper, and lemon juice.
- Heat olive oil in a pan over medium heat and add minced garlic.
- Sear the chicken in the pan for about 5-7 minutes on each side until golden brown.
- In a separate pot, steam the broccoli until tender.
- Serve the seared chicken on a bed of cauliflower rice with steamed broccoli on the side.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the cooked chicken and cauliflower rice for up to 2 months.
