- 1 cup quinoa
- 2 cups vegetable broth
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water and drain well. In a medium pot, bring the vegetable broth to a boil and then stir in the rinsed quinoa.
- Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the quinoa is fluffy and the broth has been absorbed.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add in the chopped bell pepper, zucchini, broccoli, and sliced carrot.
- Sauté the vegetables for about 5-7 minutes until they are tender and vibrant.
- Season the sautéed veggies with garlic powder, onion powder, salt, and pepper to taste.
- Serve the lively sautéed vegetables over a bed of fluffy quinoa.
