Ingredients

- 2 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 1 vanilla bean, split and seeds scraped
- 2 cups heavy cream
- 1 cup whole milk
- 6 large egg yolks
Instructions
- In a saucepan, combine the sliced strawberries, granulated sugar, and vanilla bean seeds. Cook over medium heat, stirring occasionally, until the strawberries soften and the sugar dissolves, about 5-7 minutes. Remove from heat and let cool.
- In another saucepan, heat heavy cream and whole milk over moderate heat until simmering. Remove from heat.
- Whisk the egg yolks in a bowl until pale. Gradually pour the hot cream mixture into the yolks, whisking constantly.
- Return the mixture to low heat, stirring continuously until it thickens enough to coat the back of a spoon, about 8-10 minutes. Strain into a clean bowl and let cool to room temperature.
- Refrigerate the custard until cold, about 2-3 hours.
- Pour the chilled custard into an ice cream maker and churn according to manufacturer instructions. During the last minutes, add the strawberry mixture. Transfer to an airtight container and freeze until firm, about 4 hours.
Notes
Store in an airtight container with plastic wrap pressed against the surface to prevent ice crystals.
