A creamy, delicious homemade ice cream infused with fresh strawberries and rich vanilla bean flavors, perfect for hot summer days.

- 2 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 1 vanilla bean, split and seeds scraped
- 2 cups heavy cream
- 1 cup whole milk
- 6 large egg yolks
Instructions
- In a saucepan, combine the strawberries, sugar, and vanilla bean seeds. Cook over medium heat for 5-7 minutes until strawberries are soft and sugar dissolves. Remove from heat and let cool.
- In a separate saucepan, heat heavy cream and milk until simmering, stirring occasionally. Remove from heat.
- Whisk egg yolks in a bowl until pale and slightly thickened.
- Gradually pour hot cream mixture into egg yolks while whisking constantly to prevent scrambling.
- Return mixed custard to saucepan and cook over low heat, stirring until thick enough to coat the back of a spoon (5-10 minutes).
- Strain custard into a bowl, let cool at room temperature, then refrigerate until cold (about 2 hours).
- Churn the cold custard in an ice cream maker until it reaches soft-serve consistency.
- Add cooled strawberry mixture during the last few minutes of churning.
- Transfer ice cream to a container and freeze until firm (about 4 hours or overnight).
Notes
Serve in chilled bowls or cones and garnish with fresh berries or chocolate sauce.
