A delightful banana bread infused with warm cinnamon and sweet bananas, perfect for breakfast or a snack.
Ingredients

- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth. Stir in the melted butter until combined.
- Mix in the baking soda and salt.
- Add sugar, egg, and vanilla extract, blending well.
- Stir in flour until just combined; lumpy batter is okay.
- Mix ground cinnamon and brown sugar in a separate bowl.
- Pour half the batter into the pan and sprinkle with half the cinnamon sugar mixture.
- Pour remaining batter, then top with remaining cinnamon sugar mixture.
- Swirl batter slightly with a knife.
- Bake for 60-65 minutes until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a nutty variation, add 1/2 cup of chopped walnuts or pecans. You can also mix in chocolate chips for a sweeter option.
