- 2 large sweet onions
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 1/4 cups club soda or beer
- Vegetable or canola oil, for frying
Instructions
- Peel and slice the onions into 1/2-inch thick rings; separate the rings.
- In one bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, garlic powder, and paprika.
- Gradually whisk in the club soda (or beer) until the batter is smooth.
- Heat about 2 inches of oil in a pot to 350°F (175°C).
- Dust the onion rings lightly with plain flour before dipping.
- Dip the rings into the batter, allowing any excess to drip off.
- Fry the rings in small batches for 2–3 minutes per side, or until golden and crispy.
- Remove fried onion rings with a slotted spoon and let them drain on paper towels or a wire rack.
- Serve hot with your favorite dipping sauce.
Notes
Best enjoyed fresh with various dipping sauces. To revive leftover rings, reheat in a preheated oven at 400°F (200°C) for 10-15 minutes.
