A vibrant and flavorful condiment that enhances tacos, grilled meats, salads, and more.


Ingredients

Scale
  • 500g tomatillos
  • 2 jalapeños
  • 3 garlic cloves
  • 1 small white onion
  • 1 handful fresh cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to broil.
  2. Peel and rinse the tomatillos.
  3. Arrange the tomatillos, jalapeños, unpeeled garlic, and onion slices on a baking sheet.
  4. Broil for 7-10 minutes until slightly charred and softened, flipping halfway through.
  5. Let the veggies cool for a few minutes, then peel the garlic.
  6. Transfer everything into a blender or food processor along with cilantro, lime juice, and salt.
  7. Blend until smooth or to your desired consistency.
  8. Taste and adjust the salt or lime juice as needed. If too thick, add a little water to reach your desired texture.
  9. Serve immediately or chill in the refrigerator before serving. Store in a jar for up to 5 days.

Notes

For milder sauce, remove jalapeño seeds. For extra heat, add an additional jalapeño or substitute with serrano peppers.
