Ingredients

- 500g tomatillos
- 2 jalapeños
- 3 garlic cloves
- 1 small white onion
- 1 handful fresh cilantro
- 2 tablespoons lime juice
- 1 teaspoon salt
Instructions
- Preheat your oven to broil.
- Peel and rinse the tomatillos.
- Arrange the tomatillos, jalapeños, unpeeled garlic, and onion slices on a baking sheet.
- Broil for 7-10 minutes until slightly charred and softened, flipping halfway through.
- Let the veggies cool for a few minutes, then peel the garlic.
- Transfer everything into a blender or food processor along with cilantro, lime juice, and salt.
- Blend until smooth or to your desired consistency.
- Taste and adjust the salt or lime juice as needed. If too thick, add a little water to reach your desired texture.
- Serve immediately or chill in the refrigerator before serving. Store in a jar for up to 5 days.
Notes
For milder sauce, remove jalapeño seeds. For extra heat, add an additional jalapeño or substitute with serrano peppers.
