- 6 cups cornflakes, crushed
- 1/4 cup grated parmesan cheese
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 large eggs, beaten
- 2 tablespoons hot sauce (for chicken coating)
- 2 pounds chicken breast tenderloins
- Extra virgin olive oil, for drizzling
- 1/2 cup honey
- 2–3 tablespoons hot sauce (for sauce)
- 1–3 teaspoons cayenne pepper
- 3/4 teaspoon chipotle chili powder
- 1/2 teaspoon garlic powder (for sauce)
- 1/2 teaspoon onion powder (for sauce)
Instructions
- Prepare Chicken & Coating: Trim and pat dry the chicken tenderloins. In a shallow dish, combine crushed cornflakes, parmesan cheese, smoked paprika, onion powder, and garlic powder. In another shallow dish, whisk eggs with hot sauce.
- Coat the Chicken: Dip each tenderloin in the egg mixture, then press into the cornflake mixture to coat thoroughly. Place coated chicken on a wire rack set over a baking sheet or directly in the air fryer basket.
- Prepare Hot Honey Sauce: In a saucepan, combine honey, hot sauce, cayenne pepper, chipotle chili powder, garlic powder, and onion powder. Heat over medium-low heat, stirring until combined and simmering for 3-5 minutes. Keep warm.
- Cook the Chicken: For oven baking, preheat to 400°F (200°C), drizzle with olive oil, and bake for 18-25 minutes until golden brown. For air frying, preheat to 375°F (190°C), drizzle with olive oil, and air fry for 12-18 minutes until golden brown.
- Toss & Serve: Transfer cooked chicken to a mixing bowl, pour sauce over it, and toss to coat thoroughly. Garnish with sesame seeds or chives/scallions if desired. Serve immediately.
Notes
For a gluten-free option, substitute cornflakes with gluten-free breadcrumbs. Store leftovers in an airtight container for up to 3 days.
