Description
A quick and easy one-pan dish featuring chicken, rice, and mixed vegetables, flavored with soy sauce.

- 1 pound chicken breast
- 2 cups cooked rice
- 1 cup chicken broth
- 1 cup mixed vegetables (frozen or fresh)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the chicken breast, season with salt and pepper, and cook until golden and no longer pink in the center, about 5-7 minutes.
- Stir in the mixed vegetables and cook for another 3-4 minutes.
- Add the cooked rice and chicken broth.
- Drizzle soy sauce over the top, stir well, and heat through for about 2-3 minutes.
- Serve warm.
Notes
Store leftovers in an airtight container for up to 4 days. Freeze for up to 3 months.
