- 1 rotisserie chicken
- 1 cup of cooked rice
- 1 cup of mixed vegetables (frozen or fresh)
- 1 cup of barbecue sauce
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Optional: Fresh herbs for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Remove the rotisserie chicken from its packaging and shred the meat, discarding the skin and bones.
- In a skillet, heat olive oil over medium heat and add the mixed vegetables. Cook until tender.
- Add the shredded chicken and barbecue sauce to the skillet, stirring until well combined and heated through.
- In a baking dish, layer the cooked rice and spread the chicken mixture on top.
- Bake in the preheated oven for about 15-20 minutes until everything is heated through.
- Season with salt and pepper to taste and garnish with fresh herbs if desired.
