A quick and comforting meal using rotisserie chicken, perfect for busy weeknights.


Ingredients

  • 1 rotisserie chicken
  • 1 cup of cooked rice
  • 1 cup of mixed vegetables (frozen or fresh)
  • 1 cup of barbecue sauce
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Optional: Fresh herbs for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Remove the rotisserie chicken from its packaging and shred the meat, discarding the skin and bones.
  3. In a skillet, heat olive oil over medium heat and add the mixed vegetables. Cook until tender.
  4. Add the shredded chicken and barbecue sauce to the skillet, stirring until well combined and heated through.
  5. In a baking dish, layer the cooked rice and spread the chicken mixture on top.
  6. Bake in the preheated oven for about 15-20 minutes until everything is heated through.
  7. Season with salt and pepper to taste and garnish with fresh herbs if desired.

Notes
