A simple yet delectable Mediterranean appetizer featuring creamy baked feta, cherry tomatoes, and olives, perfect for any gathering.
Ingredients

- 7 oz feta cheese block (preferably in brine)
- 1 cup cherry tomatoes, halved
- 1/2 cup mixed olives (green and Kalamata), pitted
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon black pepper
- 1/2 teaspoon coriander seeds (optional)
- 1 teaspoon fresh thyme leaves
- Zest of 1 lemon (optional)
- Crusty bread or pita for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Place the feta block in an oven-safe dish and scatter tomatoes and olives around it.
- Drizzle olive oil over everything.
- Sprinkle with oregano, red pepper flakes, black pepper, coriander seeds, thyme, and lemon zest.
- Bake for 20–25 minutes until tomatoes are blistered and feta is soft.
- Garnish with fresh thyme and serve hot with bread or pita.
Notes
For extra flavor, drizzle honey or add roasted garlic or sun-dried tomatoes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
