Description

A simple yet delectable Mediterranean appetizer featuring creamy baked feta, cherry tomatoes, and olives, perfect for any gathering.


Ingredients

  • 7 oz feta cheese block (preferably in brine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mixed olives (green and Kalamata), pitted
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon coriander seeds (optional)
  • 1 teaspoon fresh thyme leaves
  • Zest of 1 lemon (optional)
  • Crusty bread or pita for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the feta block in an oven-safe dish and scatter tomatoes and olives around it.
  3. Drizzle olive oil over everything.
  4. Sprinkle with oregano, red pepper flakes, black pepper, coriander seeds, thyme, and lemon zest.
  5. Bake for 20–25 minutes until tomatoes are blistered and feta is soft.
  6. Garnish with fresh thyme and serve hot with bread or pita.

Notes

For extra flavor, drizzle honey or add roasted garlic or sun-dried tomatoes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
