Description

A delightful, tender, and moist banana bread recipe that is easy to make, perfect for using up overripe bananas.


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup sour cream
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sour cream, sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and stir until blended.
  6. Add the flour and mix until just incorporated. If using, gently fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for about 60-65 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Wrap tightly in plastic wrap or foil to keep fresh. Can be frozen for up to 3 months.
