- 3 ripe bananas, mashed
- 1/2 cup sour cream
- 1/3 cup melted butter
- 1 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the sour cream, sugar, beaten egg, and vanilla extract.
- Sprinkle the baking soda and salt over the mixture and stir until blended.
- Add the flour and mix until just incorporated. If using, gently fold in the chopped nuts.
- Pour the batter into the prepared loaf pan.
- Bake for about 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Wrap tightly in plastic wrap or foil to keep fresh. Can be frozen for up to 3 months.
