- 4 boneless skinless chicken breasts (about 6 oz each)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 8 oz cremini or white mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup chicken broth (low sodium)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 cup fresh baby spinach (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Pat chicken breasts dry and season them generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for about 5–6 minutes on each side until golden and cooked through. Remove chicken from the skillet and set aside.
- Reduce heat to medium, adding 2 tablespoons of butter to the same pan. Once melted, add the sliced mushrooms and sauté for 5–7 minutes until they are browned and tender.
- Add the minced garlic to the mushrooms and sauté for 1 minute, allowing the flavors to meld. Pour in the chicken broth to deglaze the pan, scraping up any flavorful browned bits from the bottom.
- Stir in the heavy cream, parmesan cheese, Italian seasoning, onion powder, and red pepper flakes (if using). Let the mixture simmer for 3–4 minutes until slightly thickened.
- If using spinach, add it now and stir until it wilts into the creamy sauce.
- Return the seared chicken to the skillet, spooning the sauce and mushrooms over the top. Simmer for an additional 3–5 minutes to blend the flavors and reheat the chicken.
- Turn off the heat, garnish with fresh parsley, and serve hot.
Notes
Serve hot with sides like mashed potatoes or steamed rice to soak up the sauce. Store leftovers in an airtight container for up to 3 days.
