- 1 lb smoked sausage, sliced
- 1.5 lbs baby potatoes, halved or quartered
- 1 lb fresh green beans, trimmed
- 1 large yellow onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried Italian herbs
- 0.5 tsp salt
- 0.5 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the baby potatoes into halves or quarters.
- Trim the green beans and slice the onion.
- Slice the smoked sausage into thick rounds.
- In a large bowl, toss everything with olive oil, garlic powder, onion powder, Italian herbs, salt, and pepper.
- Spread all ingredients in a single layer on a large sheet pan.
- Roast for 35–40 minutes, flipping once halfway through for even cooking.
- Check that the potatoes are tender and the sausage is nicely browned.
- Optionally, garnish with chopped parsley or a squeeze of lemon juice before serving.
- Serve warm and enjoy the delicious medley!
Notes
For extra crispiness, broil for the last 2-3 minutes of cooking. Feel free to adjust spices and add different vegetables based on your preferences.
