A comforting dish featuring smoked sausage, tender potatoes, and vibrant green beans, all cooked on one pan for easy cleanup.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1.5 lbs baby potatoes, halved or quartered
  • 1 lb fresh green beans, trimmed
  • 1 large yellow onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried Italian herbs
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes into halves or quarters.
  3. Trim the green beans and slice the onion.
  4. Slice the smoked sausage into thick rounds.
  5. In a large bowl, toss everything with olive oil, garlic powder, onion powder, Italian herbs, salt, and pepper.
  6. Spread all ingredients in a single layer on a large sheet pan.
  7. Roast for 35–40 minutes, flipping once halfway through for even cooking.
  8. Check that the potatoes are tender and the sausage is nicely browned.
  9. Optionally, garnish with chopped parsley or a squeeze of lemon juice before serving.
  10. Serve warm and enjoy the delicious medley!

Notes

For extra crispiness, broil for the last 2-3 minutes of cooking. Feel free to adjust spices and add different vegetables based on your preferences.
