Description
A comforting dish that combines the rich flavors of seared steak and creamy sauce with rotini pasta, all made in one pot for less cleanup.

- 1 lb sirloin steak, cut into bite-sized cubes
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil
- 4 tbsp unsalted butter, divided
- 6 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1 small onion, finely diced
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 2 cups low-sodium beef broth
- 1 cup heavy cream
- 8 oz rotini pasta
- 1/2 cup grated Parmesan cheese
- 1 tbsp chopped fresh parsley
- Optional: a squeeze of lemon juice or splash of white wine
Instructions
- Pat the steak dry with paper towels and season generously with salt and pepper. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add steak cubes in a single layer and sear on all sides until browned (2–3 minutes per side). Remove steak and set aside.
- Lower the heat to medium and add 2 tablespoons of butter. Add garlic, red pepper flakes, and onion. Sauté for 2–3 minutes. Stir in smoked paprika and garlic powder.
- (Optional) Deglaze with white wine or lemon juice. Pour in beef broth and heavy cream, scraping up the browned bits from the bottom of the pan for added flavor.
- Add uncooked pasta to the pan. Bring to a boil, then reduce to low and simmer covered for 10–12 minutes, stirring occasionally.
- Once pasta is al dente and the sauce has thickened, stir in the remaining 2 tablespoons of butter and Parmesan cheese until melted. Return steak and its juices to the pan, and toss everything to coat.
- Taste and adjust seasoning. Garnish with parsley and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet, adding a splash of broth or water if too thick.
