- 1/3 cup softened butter
- 1 1/4 cups white sugar
- 2 eggs
- 4 large very ripe bananas, mashed
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 1/2 cups all purpose flour
- 1 tsp cinnamon
- 2 tsp baking soda
- 1/2 tsp salt
- 1 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 325°F and grease two 8.5 x 4.5-inch loaf pans.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the eggs one at a time until the mixture is well combined.
- Stir in the sour cream, mashed bananas, and vanilla until smooth.
- Add the flour, salt, cinnamon, and baking soda to the wet ingredients and stir just until combined—don’t overmix!
- If you’re using nuts, fold in the chopped walnuts gently.
- Divide the batter evenly between the two prepared loaf pans.
- Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean.
Notes
Use very ripe bananas for the best flavor. You can also experiment with adding chocolate chips or raisins for variations.
