Description

A deliciously moist and sweet banana bread enriched with sour cream and ripe bananas, perfect for breakfast or a snack.


Ingredients

  • 1/3 cup softened butter
  • 1 1/4 cups white sugar
  • 2 eggs
  • 4 large very ripe bananas, mashed
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 325°F and grease two 8.5 x 4.5-inch loaf pans.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Beat in the eggs one at a time until the mixture is well combined.
  4. Stir in the sour cream, mashed bananas, and vanilla until smooth.
  5. Add the flour, salt, cinnamon, and baking soda to the wet ingredients and stir just until combined—don’t overmix!
  6. If you’re using nuts, fold in the chopped walnuts gently.
  7. Divide the batter evenly between the two prepared loaf pans.
  8. Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean.

Notes

Use very ripe bananas for the best flavor. You can also experiment with adding chocolate chips or raisins for variations.
