Description

A moist and tender banana bread made with ripe bananas and sour cream, perfect for snacking or serving warm.


Ingredients

  • 1/3 cup vegetable or canola oil
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix together granulated sugar, oil, and eggs until well combined.
  3. Mash the ripe bananas and stir them into the mixture.
  4. Add the sour cream and vanilla extract, mixing thoroughly.
  5. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix; the batter should be a bit lumpy.
  7. Pour the batter into the prepared loaf pan.
  8. Bake in the preheated oven for about 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before slicing and serving.

Store wrapped in plastic wrap or in an airtight container at room temperature for up to 2 days, or freeze for up to 3 months.
