- 2 lbs sweet potatoes, peeled and chopped into ½ inch cubes
- 3 Tbsp olive oil
- 1 tsp salt
- ½ tsp ground black pepper
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp ground cumin
- ¼ tsp onion powder
Instructions
- Wash and scrub the sweet potatoes. Peel if desired, then dice into uniform ½-inch cubes.
- Soak the diced sweet potatoes in cold water for 30-60 minutes to remove starch. Drain thoroughly and pat completely dry.
- Transfer the dried sweet potato cubes to a large mixing bowl and drizzle with olive oil, coating evenly.
- In a small bowl, combine salt, pepper, paprika, garlic powder, ground cumin, and onion powder. Sprinkle over the potatoes and toss until well-coated.
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Spread the seasoned sweet potato cubes in a single layer on the baking sheet without overcrowding.
- Roast the potatoes in the preheated oven for 20-25 minutes, then flip and continue roasting for another 15-20 minutes until golden brown and crispy.
- For extra crispiness, briefly broil under high heat for 1-3 minutes, watching closely to prevent burning.
- Serve immediately, garnished with fresh chopped parsley if desired.
