Description

Nutritious and delicious roasted sweet potatoes with a crispy exterior and tender inside, perfect for any meal.


Ingredients

  • 2 lbs sweet potatoes, peeled and chopped into ½ inch cubes
  • 3 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cumin
  • ¼ tsp onion powder

Instructions

  1. Wash and scrub the sweet potatoes. Peel if desired, then dice into uniform ½-inch cubes.
  2. Soak the diced sweet potatoes in cold water for 30-60 minutes to remove starch. Drain thoroughly and pat completely dry.
  3. Transfer the dried sweet potato cubes to a large mixing bowl and drizzle with olive oil, coating evenly.
  4. In a small bowl, combine salt, pepper, paprika, garlic powder, ground cumin, and onion powder. Sprinkle over the potatoes and toss until well-coated.
  5. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  6. Spread the seasoned sweet potato cubes in a single layer on the baking sheet without overcrowding.
  7. Roast the potatoes in the preheated oven for 20-25 minutes, then flip and continue roasting for another 15-20 minutes until golden brown and crispy.
  8. For extra crispiness, briefly broil under high heat for 1-3 minutes, watching closely to prevent burning.
  9. Serve immediately, garnished with fresh chopped parsley if desired.
