Description

These vibrant candy apples combine the refreshing flavors of pineapple and lemonade, making them the perfect summer treat.


Ingredients

  • 6 medium apples (Granny Smith or Gala)
  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 3/4 cup water
  • 1/2 teaspoon pineapple extract
  • 1/4 teaspoon lemon extract
  • 1/4 teaspoon cream of tartar (optional)
  • Yellow food coloring
  • Neon yellow or gold shimmer powder (optional)
  • Wooden sticks or skewers
  • Parchment paper or silicone mat

Instructions

  1. Insert sticks into washed, de-waxed, and dried apples. Place them on parchment paper.
  2. Prepare your workstation with all tools and line your tray with parchment.
  3. In a heavy saucepan, combine sugar, corn syrup, water, and cream of tartar. Stir until the sugar dissolves.
  4. Attach a candy thermometer and bring the mixture to a boil without stirring further.
  5. Cook until it reaches 300°F (hard crack stage), about 20 minutes. Keep an eye on it to avoid burning!
  6. Remove from heat, then stir in pineapple and lemon extracts, along with the food coloring. Optionally, add the shimmer powder.
  7. Tilt the saucepan and dip the apples, turning them to get an even coat. Let any excess drip off, then place them back on the parchment.
  8. Allow the apples to cool at room temperature for 30 to 45 minutes. Optionally, drizzle with melted chocolate or sprinkle your favorite toppings.
  9. Once cooled, serve immediately or wrap individually for gifts.

Notes

Store in a cool, dry place at room temperature for up to 1 week. Best enjoyed fresh for maximum crunch and flavor.
