Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large mixing bowl, whisk together the flour, 1 1/2 cups sugar, baking soda, salt, and cocoa powder until well combined.
  3. In another bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until smooth. Combine the wet ingredients with the dry ingredients, stirring until just mixed.
  4. Divide the batter between the springform pan and another 9-inch cake pan. Bake for 25-30 minutes until a toothpick comes out clean. Let cool.
  5. For the cheesecake layer, beat the cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing well after each addition. Pour this creamy mixture over the cooled red velvet layer.
  6. Bake cheesecake for 50-60 minutes until set. Allow it to cool to room temperature, then refrigerate for at least 4 hours or overnight to achieve the best texture.
  7. Top with fresh strawberries and drizzle with strawberry preserves before serving. Optionally, add whipped cream for extra indulgence.
