A delightful dessert that celebrates fresh strawberries embraced by fluffy biscuits and whipped cream. Perfect for summer picnics and family gatherings.

Ingredients

Scale
  • 2 cups fresh strawberries, sliced
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Toss the sliced strawberries with sugar and let them sit for about 30 minutes until they release their juices.
  2. Preheat the oven to 425°F (220°C).
  3. In a bowl, mix together the flour, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the heavy cream and vanilla extract until just combined.
  6. Turn the dough onto a floured surface, knead lightly, and roll it out to about 1-inch thick.
  7. Cut out round biscuits and place them on a baking sheet.
  8. Bake for about 15-20 minutes until they turn golden brown.
  9. Assemble the shortcake by cutting the biscuits in half, layering with strawberries and whipped cream, and serve.

Notes

For best results, serve fresh and consider garnishing with mint leaves or dusting with powdered sugar.
