  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ripe avocados
  • 1/4 cup red onion
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 2 cups cilantro lime rice
  • 1 can black beans
  • 1 cup corn
  • 1 cup plain Greek yogurt
  • 1 tablespoon chipotle peppers in adobo
  • 1 tablespoon adobo sauce
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder

Instructions

  1. In a bowl, combine the lime juice, lime zest, olive oil, honey, paprika, garlic powder, salt, and black pepper.
  2. Add chicken thighs to the marinade, coating well. Cover and marinate for at least 30 minutes, or overnight in the refrigerator.
  3. Prepare guacamole by mashing avocados and mixing in fresh cilantro, lime juice, and salt to taste.
  4. Preheat grill or skillet over medium-high heat. Cook chicken for 5-7 minutes per side until fully cooked (internal temperature reaches 165°F). Let rest, then slice.
  5. In bowls, start with a base of cilantro lime rice. Top with sliced chicken, black beans, corn, and a dollop of guacamole.
  6. Drizzle with Greek yogurt mixed with chipotle peppers, adobo sauce, lime juice, salt, and garlic powder.

Notes

Marinate chicken longer for enhanced flavor. For a smokier taste, grill the chicken instead of pan-frying.
