- 1/4 cup red onion

- 2 cups cilantro lime rice
- 1 can black beans
- 1 cup corn
- 1 cup plain Greek yogurt
- 1 tablespoon chipotle peppers in adobo
- 1 tablespoon adobo sauce
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
Instructions
- In a bowl, combine the lime juice, lime zest, olive oil, honey, paprika, garlic powder, salt, and black pepper.
- Add chicken thighs to the marinade, coating well. Cover and marinate for at least 30 minutes, or overnight in the refrigerator.
- Prepare guacamole by mashing avocados and mixing in fresh cilantro, lime juice, and salt to taste.
- Preheat grill or skillet over medium-high heat. Cook chicken for 5-7 minutes per side until fully cooked (internal temperature reaches 165°F). Let rest, then slice.
- In bowls, start with a base of cilantro lime rice. Top with sliced chicken, black beans, corn, and a dollop of guacamole.
- Drizzle with Greek yogurt mixed with chipotle peppers, adobo sauce, lime juice, salt, and garlic powder.
Notes
Marinate chicken longer for enhanced flavor. For a smokier taste, grill the chicken instead of pan-frying.
