  • 1 cup raw walnuts
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup almond flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 tablespoon maple syrup (optional)
  • 1/3 cup chopped nuts or dried fruit (optional)

Instructions

  1. Begin by pitting and chopping the Medjool dates. Soak them in warm water for about 10 minutes if they are dry.
  2. Line a square baking dish with parchment paper for easy removal.
  3. In a food processor, pulse together walnuts and almond flour until a fine meal forms.
  4. Add cocoa powder, vanilla, and sea salt, blending until mixed.
  5. Gradually add chopped dates, blending until a sticky dough-like texture forms. Add maple syrup or a splash of water if too dry.
  6. Fold in optional mix-ins like chopped nuts or dried fruit.
  7. Press the mixture into the prepared dish, flattening the surface firmly.
  8. Chill in the fridge for about an hour or freeze for 30 minutes until firm.
  9. Once set, remove from the pan and slice into squares. Enjoy chilled or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to a week, or freeze for up to three months. Experiment with different nuts or seeds for various textures and flavors.
