Instructions
- Begin by pitting and chopping the Medjool dates. Soak them in warm water for about 10 minutes if they are dry.
- Line a square baking dish with parchment paper for easy removal.
- In a food processor, pulse together walnuts and almond flour until a fine meal forms.
- Add cocoa powder, vanilla, and sea salt, blending until mixed.
- Gradually add chopped dates, blending until a sticky dough-like texture forms. Add maple syrup or a splash of water if too dry.
- Fold in optional mix-ins like chopped nuts or dried fruit.
- Press the mixture into the prepared dish, flattening the surface firmly.
- Chill in the fridge for about an hour or freeze for 30 minutes until firm.
- Once set, remove from the pan and slice into squares. Enjoy chilled or at room temperature.
