Description

Warm and Buttery Apple Pie Cookies combine the flavors of traditional apple pie with a soft, buttery cookie texture, perfect for fall gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup diced Granny Smith apple
  • 1/2 cup diced Honeycrisp apple
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
  • 1/4 cup caramel sauce (optional)

Instructions

  1. In a small saucepan, cook the diced apples with brown sugar, cinnamon, nutmeg, and lemon juice over medium heat until softened, about 5-7 minutes. Stir in the cornstarch and allow the mixture to thicken. Let the filling cool.
  2. In a bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  3. Add the egg yolk and vanilla extract to the butter mixture, and mix well until combined.
  4. Gradually add the flour, cinnamon, and salt to the mixture to form a soft dough.
  5. Scoop the dough into balls and place them on a parchment-lined baking sheet. Flatten each ball slightly and create a well in the center.
  6. Spoon the cooled apple filling into each well.
  7. Bake at 350°F (175°C) for 12-15 minutes, or until the edges are golden.
  8. Allow to cool slightly before drizzling with optional caramel sauce.
