- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup diced Granny Smith apple
- 1/2 cup diced Honeycrisp apple
- 1 teaspoon cornstarch
- 1 teaspoon lemon juice
- 1/4 cup caramel sauce (optional)
Instructions
- In a small saucepan, cook the diced apples with brown sugar, cinnamon, nutmeg, and lemon juice over medium heat until softened, about 5-7 minutes. Stir in the cornstarch and allow the mixture to thicken. Let the filling cool.
- In a bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
- Add the egg yolk and vanilla extract to the butter mixture, and mix well until combined.
- Gradually add the flour, cinnamon, and salt to the mixture to form a soft dough.
- Scoop the dough into balls and place them on a parchment-lined baking sheet. Flatten each ball slightly and create a well in the center.
- Spoon the cooled apple filling into each well.
- Bake at 350°F (175°C) for 12-15 minutes, or until the edges are golden.
- Allow to cool slightly before drizzling with optional caramel sauce.
