Description

This comforting soup combines the nutty sweetness of butternut squash with crisp apples, finished with warm spices for a flavorful experience.


Ingredients

  • 2 cups butternut squash, peeled and diced
  • 2 apples, peeled, cored, and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk or heavy cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the diced butternut squash and apples to the pot, stirring occasionally for about 5 minutes.
  3. Pour in the vegetable broth, and bring to a boil. Reduce heat and let simmer for about 20 minutes, or until the squash and apples are tender.
  4. Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
  5. Stir in the coconut milk or heavy cream, cinnamon, nutmeg, salt, and pepper.
  6. Heat through and serve warm.

Notes

Choose ripe apples for the best flavor and adjust the thickness of the soup to your preference.
