- 2 cups butternut squash, peeled and diced
- 2 apples, peeled, cored, and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk or heavy cream
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the diced butternut squash and apples to the pot, stirring occasionally for about 5 minutes.
- Pour in the vegetable broth, and bring to a boil. Reduce heat and let simmer for about 20 minutes, or until the squash and apples are tender.
- Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
- Stir in the coconut milk or heavy cream, cinnamon, nutmeg, salt, and pepper.
- Heat through and serve warm.

Choose ripe apples for the best flavor and adjust the thickness of the soup to your preference.
