  • 1 cup unsalted butter, softened at room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup buttermilk
  • For the Topping:
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Start by reducing the apple cider. Pour 1.5 cups of cider into a small saucepan over medium heat. Simmer for about 15 to 20 minutes until you have exactly 3/4 cup left. Let it cool completely.
  2. Preheat your oven to 350°F (175°C). Generously grease and flour a 10-cup bundt pan or spray it with a non-stick baking spray.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set this aside.
  4. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together. Use a hand mixer or stand mixer on medium speed for about 3 minutes until the mixture looks pale and fluffy.
  5. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  6. Reduce the mixer speed to low. Add the dry flour mixture in three parts, alternating with the reduced cider and the buttermilk. Start and end with the flour. Mix just until combined; do not overmix.
  7. Pour the batter into the prepared bundt pan and smooth the top with a spatula.
  8. Bake for 45 to 55 minutes. You will know it is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  9. Let the cake cool in the pan for 10 minutes. Then, carefully turn it out onto a wire rack.
  10. While the cake is still warm, prepare the topping. Mix the sugar and cinnamon in a small bowl. Brush the entire surface of the cake with melted butter, then generously sprinkle or press the cinnamon sugar all over the cake until it is well coated.
