Apple Cinnamon Baked Oatmeal for a Cozy Fall Breakfast

  • 2 cups old-fashioned rolled oats (do not use instant oats)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 2 cups milk of your choice (dairy, almond, or oat milk)
  • 1/3 cup pure maple syrup
  • 2 large eggs
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 2 large apples, cored and chopped into bite-sized pieces (Honeycrisp or Granny Smith work best)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch or 9×9-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, stir together the rolled oats, chopped nuts (if using), baking powder, cinnamon, ginger, and salt.
  3. In a separate medium bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract until well combined.
  4. Spread the chopped apples evenly across the bottom of the prepared baking dish.
  5. Pour the dry oat mixture over the apples and spread it out evenly.
  6. Slowly pour the liquid mixture over the oats. Gently tap the dish on the counter to make sure the milk moves through all the layers. Do not stir it too much; just ensure the oats are submerged.
  7. Bake for 35 to 40 minutes, or until the top is golden brown and the oats have set.
  8. Remove from the oven and let it cool for about 5 to 10 minutes before slicing. This helps the oatmeal set so it holds its shape.
