- 2 cups old-fashioned rolled oats (do not use instant oats)
- 1 teaspoon baking powder
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon salt
- 2 cups whole milk or unsweetened almond milk
- 1 large egg, room temperature
- 1/3 cup pure maple syrup or honey
- 2 tablespoons melted coconut oil or melted butter
- 1 teaspoon pure vanilla extract
- 2 medium sweet apples (such as Honeycrisp or Gala), peeled and diced
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch square baking dish with a little oil or butter.
- In a large mixing bowl, stir together the rolled oats, baking powder, cinnamon, and salt.
- In a separate medium bowl, whisk together the milk, egg, maple syrup, melted coconut oil, and vanilla extract until well combined.
- Pour the wet ingredients over the dry oat mixture. Stir gently until everything is moistened.
- Fold in the diced apples and half of the chopped nuts if you are using them.
- Pour the mixture into the prepared baking dish. Spread it out evenly with a spatula.
- Sprinkle the remaining nuts over the top of the oatmeal.
- Bake for 35 to 40 minutes. The oatmeal is done when the top is golden brown and the liquid has been fully absorbed.
- Remove from the oven and let it cool for 5 to 10 minutes before slicing. This helps the slices hold their shape.
