    • 2 tablespoons granulated sugar
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
  • For the Crisp Topping:
    • 1/2 cup old-fashioned rolled oats
    • 1/2 cup all-purpose flour
    • 1/2 cup light brown sugar, packed
    • 1/2 teaspoon ground cinnamon
    • 1/4 cup cold unsalted butter, cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture firmly into the bottom of the prepared pan. Bake for 8 minutes, then remove from the oven and let it cool slightly.
  3. In a large mixing bowl, beat the softened cream cheese and 1/2 cup sugar until smooth and creamy. Add the egg and vanilla extract, and beat again until just combined. Spread this mixture evenly over the baked crust.
  4. In another bowl, toss the diced apples with 2 tablespoons sugar, 1 teaspoon cinnamon, and nutmeg. Spoon the apple mixture evenly over the cheesecake layer.
  5. To make the topping, combine the oats, flour, brown sugar, and 1/2 teaspoon cinnamon in a bowl. Use a fork or your fingers to work the cold butter cubes into the mixture until it looks like coarse crumbs.
  6. Sprinkle the topping over the apple layer, covering it completely.
  7. Bake for 40 to 45 minutes, or until the cheesecake is set and the topping is golden brown.
  8. Remove from the oven and let the pan cool to room temperature on a wire rack. Then, refrigerate the bars for at least 3 hours (or overnight) to allow the cheesecake to firm up completely.
  9. Lift the bars out of the pan using the parchment paper overhang. Slice into squares and serve.
