Baked Cod with Honey Garlic Sauce

Ingredients

  • 4 Cod fillets (about 6 ounces each)
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (use low sodium if you prefer)
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with a little bit of olive oil or non-stick spray.
  2. Pat the cod fillets dry with paper towels. Season both sides of the fish with salt and black pepper.
  3. Place the cod fillets in the prepared baking dish in a single layer.
  4. In a small mixing bowl, width together the honey, minced garlic, soy sauce, lemon juice, and olive oil until well combined.
  5. Pour the honey garlic mixture over the cod fillets. Use a spoon to make sure each piece of fish is well coated.
  6. Bake in the preheated oven for 12 to 15 minutes. The exact time depends on the thickness of your fish. The cod is done when it is opaque and flakes easily with a fork.
  7. During the last 2 minutes of baking, you can spoon some of the sauce from the bottom of the dish back over the top of the fish to keep it extra moist.
  8. Remove from the oven. Garnish with fresh parsley and serve with lemon slices on the side.
