- 3 large overripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
- In a large mixing bowl, mash the ripe bananas with a fork until they are mostly smooth.
- Stir the melted butter into the mashed bananas until well combined.
- Mix in the sugar, beaten egg, and vanilla extract. Use a wooden spoon or spatula for this.
- Sprinkle the baking soda and salt over the mixture and stir it in.
- Gently fold in the flour and cinnamon. Stir just until the flour disappears; do not overmix the batter.
- Pour the batter into your prepared loaf pan and smooth the top with a spatula.
- Bake for 50 to 60 minutes. You know it is done when a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes. Then, move it to a wire rack to cool completely before slicing.
